my baked mac n cheese recipe
here's my recipe for my baked mac n cheese! *preheat oven to 350 degrees. *slice up one white or yellow onion into slices or chunks. *start a pot of water to boil for pasta. when it's boiling, add 2# of your favorite pasta (not a long pasta, something short) and cook until done. drain and set aside. *put onion in saucepan with a little butter and turn on med-high and stir and saute until the onions are brownish and floppy (that's carmelized if you're a cook:). *pour in a quick splash of white wine and stir around to get the onions all coated (yep, deglazing for you cookers). *add 2 cups or so of milk and 2 handfuls of shredded desired cheese. i like cheddar, but go crazy, add whatever you want. stir and it will thicken up. if it doesn't thicken into a cheese sauce, add some more cheese. remove from heat. taste and add salt and pepper if you want. *in a largish bowl mix together the cooked pasta and cheese sauce. this shouldn't be too runny. add another handful or so of cheese (this really depends on how cheesy you want it.) *transfer mac n cheese to a deep baking dish, it can be ceramic, glass, metal, whatever as long as it can go in the oven and the mac n cheese fits without overflowing. *sprinkle a layer of breadcrumbs on top and add a layer of sliced tomatoes with a little more breadcrumbs on top of that. *bake covered at 350 for 20 minutes. remove cover and brown the edges for 10-15 minutes. i hope you like it and it comes out well. i'm not so big on exact measurements...cooking is all about throwing stuff together for me! |
